I love trying out new food combinations! So I decided to combine 2 of my favorite super foods Oatmeal and Chicken. I looked for some recipes online. I found a hand full but nothing that really grabbed my attention. So I used some of the ideas I found on my search and created my very own Recipe!
Note: I prepared this recipe with a side dish of chopped and seasoned zucchini. Stay toned for some zucchini recipes and a top 10 preparation list.
What you will need:
- 1 cup egg beaters
- 3/4 cup quick oats
- 1 tbsp crushed red pepper (optional)
- 1 tbsp paprika (optional)
- 2 tbsp Mrs. Dash southwest chipotle seasoning (optional)
- 1 pound of skinless chicken breast cutlets
Preparation:
Pound chicken with a meat mallet until thin. Preheat oven to 425 degrees. In a bowl combine spices and oats, mix slightly for only a few seconds. In another bowl poor in the egg beaters. Spray some PAM or non-stick cooking oil onto a baking sheet. Dip each chicken cutlet into egg beaters on both sides then move the chicken cutlet into the bowl of spices and coat both sides with the oat mixture. Move the chicken cutlets onto the baking sheet and let bake for 20-25 minutes.
